Our flagship product is a masterpiece of classic Dutch craftsmanship. It pays tribute to the historic "Opstand van het Kaas- en Broodvolk" (The Bread and Cheese Revolt) of 1492, when the defiant people of Kennemerland rose up to fight for their rights, painting cheese proudly onto their battle banners.
This premium, extra-matured Hollandse Oude Kaas is aged on traditional wooden shelves to achieve an intense, nutty, and savory matrix. Kennemerland Kaas is masterfully crafted as a 30+ formulation, making it lower in fat and higher in protein than standard old cheeses.

It is a bold, deliberate marriage of iconic Dutch creaminess and a sophisticated, lingering Mexican spark—a testament to our commitment to boundary-pushing cheesemaking.
La Adelita pays tribute to the legendary women— Las Adelitas—who fought alongside their male counterparts during the Mexican Revolution of 1910. Much like the defiant peasants of the 1492 "Bread and Cheese Revolt" in Kennemerland, these women stood at the forefront of social change, becoming enduring symbols of courage, resilience, and revolutionary spirit. By pairing the history of these fearless figures with our own heritage, we have crafted a cheese that is as bold and spirited as the legends that inspired it.

A bold, distinct addition to our collection, Doña Kenau is a typical Dutch, aged goat’s cheese - Nederlandse Oude Geitenkaas. Unlike the common fresh, soft goat cheese, our aged variety offers a firm, crystalline texture and a complex, velvety length developed over months of careful maturation. We have intentionally adorned this Dutch classic with a Spanish-inspired rind rub, a nod to the long and tumultuous history between the Netherlands and Spain.
Doña Kenau honors Kenau Simonsdochter Hasselaer, the legendary heroine of Kennemerland who fearlessly defended her city during the Siege of Haarlem in 1573. This struggle was a pivotal moment in the Eighty Years' War—also known as the Dutch War of Independence—a protracted fight by the Netherlands for independence from Spanish rule. By pairing the history of this fierce Dutch resistance with a Spanish-influenced finish, Doña Kenau serves as a tribute to the resilience required to fight for one’s freedom, and the enduring strength of those who stand their ground.
